Catering Manager Olly and the team brought their famous Southern Slow Roast Menu to the celebrations, serving 66 hungry guests with mouthwatering dishes that suited every appetite.
The couple chose three slow-cooked favourites that had the wedding party buzzing with excitement. Juicy BBQ pork butt, rich Texan 24-hour beef brisket, and tender Cajun-spiced roast chicken made for a main course packed with flavour. With bread rolls and wraps available (including gluten-free on request), everyone could enjoy their meat just how they liked it – piled high and dripping with sauce. And when it came to sauces, there was no shortage of choice. Guests raved about the smokey sweet BBQ glaze, the fiery Cajun hot pepper sauce for those brave enough to try it, and the legendary hickory bourbon BBQ sauce that kept people coming back for more.
Of course, Hog Roast Hayling Island always makes sure there’s something fantastic for vegetarians and vegans too. This wedding featured grilled vegetable skewers with halloumi for veggies (and without for vegans), served alongside wraps, tzatziki, and sweet chilli sauce. The vegan pulled jackfruit was a real hit as well – served in soft buns with crunchy slaw and drenched in rich hickory BBQ sauce, it made for a hearty option that rivalled the meaty mains.
The sides kept the feast vibrant and varied. Creamy mac and cheese, crisp green leaf salad, and homemade coleslaw balanced the hearty meats, while a mix of sweet potato and traditional fries added a fun, crowd-pleasing touch. Everything was presented beautifully on rustic wooden bamboo crockery with eco-friendly cutlery, keeping the vibe relaxed yet stylish.
